Ingredients

8 ounce sliced button mushrooms (optional)

2 larger yellow or white onions

1 bunch of celery (sliced or grated)

3 carrots slice or grated

2 green peppers (or your color choice)

2 cloves of garlic grated

2 table spoons of olive oil or avocado oil

2 tablespoons of low-sodium soy sauce (optional)

½ head of green cabbage (shredded)

1 teaspoon of garlic power
-
1 teaspoon of onion power
-
4 cups of vegetable broth
-
1 28 ounce can of crushed or dice tomatoes Salt & Pepper to taste

One Pan Vegetable Scramble (Vegan)
Ingredients
● 2 zucchini chopped into half circles
● 1 bell pepper green or color of choice
● 1-2 sweet potato medium to large
● 1 yellow squash chopped into half circles
● 1 head broccoli cut into bite sized pieces
● 3 tablespoons Extra Virgin Olive Oil (or you know maybe more depending upon how you like it)
● 1 tablespoon Black Pepper
● 1 ⁄2 tablespoon Poultry Seasoning (contains no poultry)
● 1 ⁄2 tablespoon garlic powder or salt
● Sea Salt to your liking
